It’s time for the BIG GAME and there’s a ton of CARB LOADED options in front of you! Be prepared this Super Bowl and let us RESCUE you from all the temptations! Recipes for all the Super Bowl Rescue dishes are listed below!

Keto Pigs in a Blanket

Stupid Easy Dough (courtesy of Rachael Dee at www.rachaeldee.com)

1 egg
1 Cup Mozzarella
½ Cup Almond Flour
1/4 Tbsp Baking Powder
Drizzle of Olive Oil (substitute your preferred oil)
Minced Garlic to taste
Salt to taste
Seasonings to taste (optional)

Little Smokie all beef franks or hot dogs cut into smaller portions

Preheat oven to 375 degrees.

Combine all ingredients in a large bowl until well combined. No need to melt cheese! Once everything is mixed together, form dough mixture around small hot dogs such as Lit’l Smokies or you could even use hot dogs, cut into smaller portions. It will be sticky! It will be messy! You do not need much dough mixture for each one, a little will go a long way once the dough bakes and rises around the little hot dog.

Bake at 375 degrees for approximately 20-25 minutes. Time will vary based on size of your formed piggies and your oven so be sure to check them often! They should be firm to the touch and lightly browned on top!

We did a quadruple batch in this video and it made 12 but we could have used FAR less dough mixture and gotten MANY more little piggies!

Keto Pulled Pork

Ingredients:

(1) 3.5lb Boneless Pork Shoulder Roast
¼ Cup Taco Seasoning (either homemade or store bought) OR seasoning of your choice!

Tools:

Slow Cooker or Electric Pressure Cooker

Directions:

Cube pork shoulder into 1-2 inch cubes. Place in slow cooker or electric pressure cooker. If using slow cooker, cook on low for 5-6 hours or until meat is fork tender and can be shredded. If using electric pressure cooker, place meat in a steamer basket, raised up off the bottom of the insert. Add ¼ Cup of water beneath the steamer basket. Use manual setting on high pressure and set time to 90 minutes. Close steam release valve and let the pressure cooker do it’s thing! You can either do a quick release when the meat is done or do a slow release, either will work.

Transfer cooked pork to a large bowl and begin to shred with 2 forks. After pork is completely shredded, add in either taco seasonings or seasonings of your choice! Enjoy over a plate of pork rinds topped with our Keto Queso or in a low carb tortilla or on a stupid easy bread round for a pulled pork nachos, tacos or sandwich! Or enjoy by itself!

Keto Queso

Ingredients

¼ lb chopped bacon
8 oz Velveeta
½ Tbsp Paprika
½ Tbsp Cumin
½ Tbsp Onion Powder
2 pinches Black Pepper
1 minced chipotle chile (from a can in adobo sauce)
2 Tbsp chopped Jalapeno
¼ Cup Beef Stock

Saute bacon in skillet on medium heat until browned. Reduce heat to medium-low. Add in peppers and seasonings to the pan, keeping bacon grease. Stir until well combined. Add in Velveeta and let melt slowly. Add beef stock and stir to combine until desired consistency is met. Sauce will thicken upon resting, add additional beef stock to thin out if necessary.
