Salmon Kale Salad


Adapted from here to lower the carb count: Salmon Kale Superfood Salad


1 12 oz bag of kale salad mix (I used kale slaw, a mix of kale, broccoli, brussel sprouts, and cabbage)

4 oz smoked salmon (Ocean's canned brand works just fine but smoked salmon would enhance flavour)

1/4 cup blueberries

2 oz pistachios

1/2 avocado


1/3 cup mayo

1 1/2 tbsp avocado oil

1 1/2 tbsp lemon juice

1/4 tsp garlic powder

1 1/2 tbsp Swerve granulated (erythritol)

1 1/2 tsp poppy seeds

Salt to taste

  1. Combine salad mix, salmon, and blueberries into large bowl.
  2. Combine all ingredients for dressing in separate bowl and whisk until well mixed. Add to salad mix and toss.
  3. Add pistachios and avocado to bowl and toss again.

Servings: 4
