MACROS + FULL RECIPE + METRIC MEASUREMENTS:
These keto pumpkin spice cheesecake bars are one of my favorite keto desserts to date. Before going keto, high-carb pumpkin cheesecake bars used to be my kryptonite come October and Novemeber, but now I’ve found a keto version!! They taste unbelievably similar, even with some carrot puree subbed in for half the pumpkin puree to lower the carbs a bit.
More amazing keto CHEESECAKE recipes:
**To make carrot puree, just put steamed or boiled (and drained) carrots in a blender or food processor and process until it becomes a smooth paste. I would not recommend baking them, as that will up the carb content a bit because the high heat will turn more of the starches into sugars.
****NOTE: The ingredient quantities in the video and on the website are all for a FULL recipe, but I only filmed a half-recipe, meaning that the quantities you see written will make DOUBLE the amount of cheesecake bars shown.
