In this episode of Abbey’s Kitchen Abbey is soaking up the sun in the great outdoors to do some cooking. Today’s recipe was a request from a lot of her followers. This is a keto recipe, and admittedly Abbey is not a huge fan of the keto diet or really any diet. However the keto diet can be really restrictive and a lot of the recipes are not very balanced or healthy. Case and point, Abbey and Abby tried a bunch of the crazy ones and they were not so great. But, not this one! This is Abbey’s avocado bruschetta that is keto friendly, gluten free and packed with antioxidants and healthy fats. And of course it’s really tasty.
Let’s do this.
To a bowl of diced tomatoes, add some extra virgin olive oil, basil and a pinch of salt. Give that a stir.
Next add some extra virgin olive oil to some avocados and place them onto the grill on medium high heat. Grill them for about five minutes so they get some nice grill marks.
Next, top the grilled avocados halves with the bruschetta mixture. Add some sliced buffalo mozzarella. Pop it back onto the grill on indirect heat grilling it on medium low for about five to ten minutes until the cheese melts. Finally top it off with some parmesan cheese, a drizzle of a balsamic reduction, some basil leaves and enjoy.
