I first created this recipe for my husband’s birthday because he LOVES carrot cake! I was so happy with the way this recipe turned out, so I thought why not share it in time for Easter!
R E C I P E
1/2 cup shredded carrots
1/2 stick butter, melted
2 eggs
1/4 cup half and half (or coconut cream)
1 cup almond flour
2 tbsp coconut flour
2 tbsp tapioca flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
1 tsp maple extract
pinch salt
1/4 cup pyure (

Bake at 350 for 40-45 minutes in 1 quart pyrex dishes (

CREAM CHEESE ICING
8 oz cream cheese (or dairy free cream cheese)
1 stick butter (or vegan butter)
1-2 cup powdered Swerve (
1 tsp vanilla extract
pinch salt

MACROS: 10 servings
